Southwestern Corn and Black Bean Salad
Bring this easy salad to a picnic, for a change of pace...
In a large bowl, combine:
1 can sweet corn (or small bag of frozen corn)
1 can black beans, drained
1 cup diced red pepper
1/2 cup finely diced red onion
1 large clove garlic, grated
Handful of fresh parsley, chopped
1/4 cup olive oil
1 T red wine vinegar
1 T Feisty Fiesta blend by Your Spice of Life
Blend well and refrigerate. May be made a day ahead.
