| This versatile crock pot recipe can be served over rice, on a bun, or as an hors d'oeuvre!
If your crock pot can be removed from the base, use it for the following steps. Otherwise, use a separate pan.
Over medium-low heat, use olive oil to sautee 3 cloves garlic, sliced thin and 1 large yellow onion, diced. Stir in 2 T tomato paste and cook for 1 minute. Add 1 T Instant Jerk spice blend from Your Spice of Life, stir well. Place crockpot on base (or transfer contents to crockpot). Set heat to medium-low. Add 2 cups chicken stock. Add 1/4 cup brown sugar. Add 3 T cider vinegar, and stir to combine. Add 2 lbs. boneless, skinless chicken thighs (or breasts) Add enough water to cover the chicken if it does not already. Cook until chicken can be easily pulled apart with a fork. Using 2 forks, shred the chicken. Taste for seasoning; add a dash of sea salt ot additional Instant Jerk blend if needed. Squeeze one fresh lime into mixture immediately before serving.
For appetizers: Spoon a small amount onto light, thin crackers. Top with slivers of dried mango or dried ginger. Garnish plate with lime wedges.
